The cherries were first sterilized using only salt before being placed whole into a sealed CO₂-filled carbonic maceration tank. No water, commercial yeast Novonesis Denmark Yeast, lactic acid, or fermentation additives were used, allowing the coffee's natural microbiology to drive a clean and expressive 48-hour anaerobic carbonic maceration.\u003c\/p\u003e\n\u003cp data-start=\"1101\" data-end=\"1590\"\u003eAfter fermentation, the cherries were transferred directly to raised beds and slow sun-dried for 18 days, allowing the coffee to develop concentrated sweetness while preserving the elegant floral and fruit-forward characteristics that define Gesha. The coffee was then stabilized before milling to ensure consistency and cup quality.
